868-915 mHz - which is it 869 or 915??

I'm confused by the mixed nomenclature.  For instance, looking at antennas on DigiKey, I see one antenna that has 915mHz center freq then another that shows 868-915.  Then on the LowPowerLab site, I see a lot of instances where the transceivers are listed as 868-915 without a choice to select which one.

But the dipole antenna says you need to trim the length depending on the freq - https://lowpowerlab.com/shop/product/161

Can someone explain what is going on with the mix/match on 868 vs 915?

You select the freq. In your sketch.

A 915MHZ transceiver will work for 868MHZ as well but not 433MHZ.  You need a 433MHZ transceiver for that frequency.

That is correct, there are only 3 modules, 315, 433 and 868/915. Last one you can use in either band
