Larger flash chip?

Prior to purchasing the Moteino, I had a question that, hopefully, can be answered here by the kind people of this forum!

My application requires constant logging, and, only once in a blue moon, will the Moteino board be wirelessly communicating to spit its flash-stored data log. According to my calculations, the included 4 Mbit flash chip will prove to be too small for my intended usage.

The question is the the following : is there an obstacle to soldering and using a larger flash chip on the PCB? eg: W25Q80BV, which is an 8 Mbit, Winbond serial flash memory.

You can certainly do so as long as the pinout matches that of the one I use, these are pretty standard overall. See the flash chip pinout on the moteino page.
