I'm sorry ahead of time. I know this is a basic question, but I just don't know the answer.
I've never soldered anything with castellations before. Should I solder on the "side" of the two boards or use the thru holes?

The castellations are provided for the flattest most compact soldering. But this means they are permanently soldered, and not very easy removal.
Otherwise if you're prototyping/experimenting you can always just solder male/female headers and then you can remove the board easily.
