Definitely a lot of options, and lots of combinations (see DS for example common resistor values that are easy to find and easy to obtain common sleep intervals). You can solder SMD resistors on the bottom, or use the side pins on a breadboard (with similar 1/8w resistors as those offered in the kit), or you can even solder them directly ontop the pin headers once those are soldered to the breakout.
I don't see any problem with power cyclying the load (moteino or whatever) at any interval.
